- 4 boneless skinless chicken breasts
 - 2 tablespoons olive oil
 - 2 tablespoons butter
 - 1 small onion sliced
 - 8 oz mushrooms sliced
 - 3 cloves garlic minced
 - ½ cup chicken broth
 - ½ cup heavy cream
 - 1 teaspoon fresh thyme
 - 1 cup Monterey Jack cheese shredded
 - ½ cup Cheddar cheese shredded
 - Salt and pepper to taste
 - ½ teaspoon paprika
 - ½ teaspoon garlic powder
 
 
Preheat oven to 375°F.
Season chicken with salt, pepper, paprika, and garlic powder.
Heat oil in oven-safe skillet; sear chicken 5 minutes per side. Remove and set aside.
In same skillet, add butter, onions, and mushrooms. Cook 5 minutes.
Add garlic, cook 1 minute.
Pour in broth and cream. Simmer 5 minutes until slightly thickened.
Return chicken to skillet, sprinkle with thyme.
Top with both cheeses.
Bake 15-20 minutes until chicken reaches 165°F.
Broil 2 minutes to brown cheese (optional).
