Method
- Preheat oven to 375°F.
- Season chicken with salt, pepper, paprika, and garlic powder.
- Heat oil in oven-safe skillet; sear chicken 5 minutes per side. Remove and set aside.
- In same skillet, add butter, onions, and mushrooms. Cook 5 minutes.
- Add garlic, cook 1 minute.
- Pour in broth and cream. Simmer 5 minutes until slightly thickened.
- Return chicken to skillet, sprinkle with thyme.
- Top with both cheeses.
- Bake 15-20 minutes until chicken reaches 165°F.
- Broil 2 minutes to brown cheese (optional).
