Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion sliced
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 teaspoon fresh thyme
  • 1 cup Monterey Jack cheese shredded
  • ½ cup Cheddar cheese shredded
  • Salt and pepper to taste
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder

Instructions
 

  • Preheat oven to 375°F.
  • Season chicken with salt, pepper, paprika, and garlic powder.
  • Heat oil in oven-safe skillet; sear chicken 5 minutes per side. Remove and set aside.
  • In same skillet, add butter, onions, and mushrooms. Cook 5 minutes.
  • Add garlic, cook 1 minute.
  • Pour in broth and cream. Simmer 5 minutes until slightly thickened.
  • Return chicken to skillet, sprinkle with thyme.
  • Top with both cheeses.
  • Bake 15-20 minutes until chicken reaches 165°F.
  • Broil 2 minutes to brown cheese (optional).
