Ingredients
  

  • Potatoes: 4-6 medium Russet or Yukon Gold, peeled and diced
  • Onion: 1 medium diced
  • Garlic: 3-4 cloves minced
  • Vegetable or Chicken Broth: 4 cups
  • Heavy Cream or Coconut Milk for dairy-free: 1 cup
  • Salt: to taste
  • Black Pepper: to taste
  • Dried Herbs: optional such as thyme or rosemary
  • Butter or Olive Oil: 2 tablespoons for sautéing onion and garlic, optional
  • Toppings optional: Shredded cheese, crumbled bacon, green onions, sour cream

Instructions
 

  • Prep Ingredients: Peel and dice potatoes, onion, and garlic.
  • Sauté (Optional): In a skillet, sauté onion and garlic in butter or oil for 2-3 minutes.
  • Combine in Crockpot: Add potatoes, sautéed onion and garlic, and herbs to the crockpot.
  • Add Broth: Pour in vegetable or chicken broth to cover the potatoes.
  • Season: Add salt and pepper to taste.
  • Cook: Cover and cook on high for 4 hours or low for 6-8 hours until tender.
  • Blend (Optional): Use an immersion blender for a creamy texture.
  • Stir in Cream: Add heavy cream or coconut milk, and heat for an additional 15-20 minutes.
  • Adjust Seasoning: Taste and adjust salt and pepper if needed.
  • Serve: Ladle into bowls and top with cheese, bacon, or green onions as desired.
