  • 2 pieces cucumbers, diced Choose firm cucumbers for the best results.
  • 1 piece sweet bell pepper, diced Any color (red, yellow, or orange) works well.
  • 1/4 cup red onion, thinly sliced Thin slices ensure easier mixing.
  • 1/4 cup fresh parsley, chopped Wash well to remove any dirt.
Dressing
  • 2 tablespoons olive oil Use extra virgin for the best flavor.
  • 1 tablespoon vinegar (balsamic or apple cider) Can substitute with lemon juice.
  • to taste salt and pepper Season to taste.

Method
 

Preparation
  1. Wash cucumbers, bell peppers, and parsley thoroughly.
  2. Dice cucumbers and sweet bell pepper into small, even pieces.
  3. Thinly slice the red onion.
  4. Finely chop the fresh parsley.
Mixing
  1. In a large mixing bowl, add diced cucumbers, bell peppers, sliced onion, and chopped parsley.
  2. Drizzle olive oil and vinegar over the mixture. Season with salt and pepper to taste.
  3. Gently toss the salad to combine all ingredients.
Serving
  1. Serve immediately or let it chill for 10-15 minutes for flavors to blend.

Notes

Enhance flavor with a dash of lemon zest, or customize with avocado or chickpeas. Best enjoyed fresh, does not freeze well.
