  • 3/4 cup brown sugar Pack tightly in the measuring cup.
  • 2 teaspoons baking powder Ensure it’s fresh.
  • 1 1/2 teaspoons ground cinnamon Adds cozy flavor.
  • 1/2 teaspoon salt Enhances sweetness.
  • 2 large eggs Can substitute with unsweetened applesauce.
  • 1/2 cup milk Almond milk works as a substitute.
  • 1/4 cup unsalted butter, melted Can substitute with melted coconut oil.
  • 1 teaspoon vanilla extract Almond extract is a good alternative.
  • 2 tablespoons powdered sugar Mix with 1-2 tablespoons of milk for glaze.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin or line with paper liners.
  3. In a large mixing bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.
  4. In another bowl, beat together eggs, milk, melted butter, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Gently fold in the diced apples.
  7. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.

Notes

Dust with powdered sugar before serving. Serve warm with butter or ice cream. Ideal for sharing in a basket.
