Preparation
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin or line with paper liners.
- In a large mixing bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, beat together eggs, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the diced apples.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
Notes
Dust with powdered sugar before serving. Serve warm with butter or ice cream. Ideal for sharing in a basket.
