Method
- Preheat Oven: Set to 325°F (163°C).
- Prepare Crust: Mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press firmly into a 9-inch springform pan.
- Make Filling: Beat cream cheese and sugar until smooth. Add vanilla, then eggs (one at a time). Stir in sour cream/heavy cream.
- Combine: Pour filling over the crust and smooth the top.
- Bake: Bake for 50-60 minutes until the center jiggles slightly.
- Cool: Let it cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
- Top: Mix sugar and cinnamon; sprinkle over the chilled cheesecake. Optionally, drizzle with chocolate or caramel sauce.
