Preparation
  1. In a large bowl, combine the diced cucumbers, sweet corn, bell pepper, red onion, and cilantro.
  2. Squeeze the lime juice over the salad and mix well.
  3. Season with salt and pepper to taste.
  4. If desired, add diced avocado or jalapeño for extra flavor.
  5. Toss gently to combine all ingredients.
  6. Chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
