Yogurt Marinated Chicken Thighs

A delicious and easy recipe for juicy chicken thighs marinated in a creamy yogurt mixture, served with colorful roasted baby potatoes.

Ingredients
  

Main Protein
  • 4 pieces Chicken thighs Trim excess fat but keep skin on for extra flavor.
Liquids/Dairy
  • 1 cup Plain yogurt Use full-fat or Greek yogurt for best results.
  • 2 tablespoons Olive oil For marinating and roasting.
  • 1 tablespoon Lemon juice For brightness in flavor.
Seasoning/Spice Blend
  • 2 cloves Garlic (minced) Add a punch of flavor.
  • 1 teaspoon Paprika For sweetness and warmth.
  • 1 teaspoon Cumin For earthy flavor.
  • Salt and pepper To taste
Starch/Pasta
  • 1 pound Baby potatoes Rinse and halve before roasting.
Aromatics & Vegetables
  • 1 tablespoon Fresh dill (chopped) Add freshness before serving.
Optional Finishing Ingredients
  • 1/4 cup Feta cheese (crumbled) Adds a salty bite.

Method
 

Preparation
  1. Combine yogurt, olive oil, minced garlic, paprika, cumin, salt, and pepper in a medium bowl. Mix until smooth.
  2. Add the chicken thighs to the mixture, fully coating them. Let marinate for at least 20 minutes.
Cooking
  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes. Toss them in a bowl with olive oil, salt, and pepper. Spread them evenly on a baking sheet.
  3. Place the marinated chicken thighs skin-side up on the same baking sheet with the potatoes.
  4. Roast in the preheated oven for 35-40 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  5. Once done, sprinkle chopped dill and crumbled feta cheese over the chicken and potatoes.
  6. Allow to rest for a few minutes before serving.
Serving
  1. Plate the chicken and potatoes beautifully, adding a sprinkle of fresh dill for color.

Notes

You can enhance flavor by marinating overnight. Customize spices according to taste, and serve with fresh lemon wedges.
