Preparation
- Combine yogurt, olive oil, minced garlic, paprika, cumin, salt, and pepper in a medium bowl. Mix until smooth.
- Add the chicken thighs to the mixture, fully coating them. Let marinate for at least 20 minutes.
Cooking
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes. Toss them in a bowl with olive oil, salt, and pepper. Spread them evenly on a baking sheet.
- Place the marinated chicken thighs skin-side up on the same baking sheet with the potatoes.
- Roast in the preheated oven for 35-40 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
- Once done, sprinkle chopped dill and crumbled feta cheese over the chicken and potatoes.
- Allow to rest for a few minutes before serving.
Serving
- Plate the chicken and potatoes beautifully, adding a sprinkle of fresh dill for color.
Notes
You can enhance flavor by marinating overnight. Customize spices according to taste, and serve with fresh lemon wedges.
