  • 1 lb boneless, skinless chicken breasts, cooked and shredded Ensure cooked thoroughly
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Low sodium recommended
  • 1 can diced tomatoes With juices
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese For topping
  • 1/2 cup grated Parmesan cheese For topping
  • 1/2 cup heavy cream
  • to taste Salt and pepper
  • to garnish Fresh basil For garnish

Method
 

Cooking
  1. In a large pot, sauté the chopped onion and minced garlic until soft.
  2. Add the cooked chicken, chicken broth, diced tomatoes, and Italian seasoning. Stir well.
  3. Bring the mixture to a boil, then add the broken lasagna noodles.
  4. Reduce heat and let it simmer for 20 minutes, or until noodles are tender.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Serve hot, topped with shredded mozzarella, grated Parmesan, and fresh basil.

Notes

Enhance flavor with red pepper flakes and customize with veggies or different noodles. This soup can be made ahead and reheated.
