Ingredients

Main Ingredients
  • 16 oz Velveeta cheese, cubed For a sharper flavor, consider adding cream cheese.
  • 10 oz Rotel diced tomatoes with green chilies, undrained Use straight from the can.
  • 1 lb Ground sausage (pork, turkey, or spicy) Brown the sausage until no longer pink. Alternatives include ground beef or vegetarian sausage.
Dipping Options
  • 1 bag Tortilla chips Use sturdy chips for dipping or baked chips for a lighter option.
Optional Garnishes
  • to taste Sour cream, chopped cilantro, or sliced green onions Add right before serving for freshness.

Method

Preparation
  1. Brown the sausage in a large skillet over medium heat for about 5-7 minutes, breaking it apart as it cooks, until it’s no longer pink.
Cooking
  1. Reduce heat to low, add the cubed Velveeta cheese to the pan, and stir frequently to help it melt evenly, which will take about 5 minutes.
  2. Pour in the undrained Rotel diced tomatoes and mix thoroughly. Let it simmer for about 3-4 minutes until everything is well blended and heated through.
  3. If the dip is too thick, add a splash of milk to reach your desired consistency, stirring smoothly to incorporate.
Serving
  1. Remove the dip from heat and transfer it to a colorful serving bowl. Top with garnishes just before serving.

Notes

This dip can be customized with spices like cumin or chili powder. Consider serving it with a variety of dippers like veggies or pretzels.
