Ingredients
  

Aromatics & Vegetables
  • 1 piece onion Chop for sautéing.
  • 3 cloves garlic Mince for sautéing.
Starch
  • 1 large potato Peel and dice into small cubes.
Main Ingredients
  • 300 grams peas Fresh or frozen; thaw if frozen.
  • 3 cups vegetable broth Low-sodium preferred.
  • 1 tbsp vegetable oil For sautéing.
  • salt and pepper To taste.
Optional Ingredients
  • 1 tbsp lemon juice Add at the end for flavor.
  • fresh herbs Like parsley or lovage, chopped.

Method
 

Preparation
  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced potatoes and sauté for another 5 minutes.
  5. Add the vegetable broth and bring to a boil.
  6. Reduce the heat and let it simmer for about 10 minutes, or until the potatoes are tender.
  7. Mix in the peas and cook for another 3-5 minutes.
  8. Turn off the heat. Using an immersion blender, purée the mixture until smooth.
  9. Once blended, season with salt, pepper, and lemon juice to taste.
  10. Ladle the soup into bowls and garnish with fresh herbs.

Notes

Toasting the garlic and onion slightly longer enhances the flavor. Experiment with different herbs for customization.
