Preparation and Cooking
  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the diced zucchini and cook for another 3-4 minutes.
  3. Stir in the halved cherry tomatoes and cook until they begin to soften.
  4. Season the mixture with salt, pepper, and any additional herbs or spices you prefer.
  5. Meanwhile, prepare your cooked rice or other side.
  6. To serve, scoop the veggie mixture over a bed of rice in bowls.
  7. Optionally, top with cheese or fresh herbs before serving.
