Ingredients
  

Pasta
  • 8 oz spaghetti Cook according to package instructions until al dente.
Main Protein
  • 1 lb chicken breast (cut into pieces) For lean protein, ensure it's cooked until no longer pink.
Vegetables
  • 2 cups fresh spinach Cook until wilted.
  • 1 can (15 oz) diced tomatoes Use canned for rich flavor.
  • 2 cloves garlic (minced) Sautéed until fragrant.
  • 1 medium onion (diced) Sautéed until translucent.
Seasonings
  • 2 tablespoons olive oil For sautéing the chicken and aromatics.
  • to taste salt Enhances flavors.
  • to taste pepper Enhances flavors.
Optional Ingredients
  • to taste grated Parmesan cheese Optional, for garnishing.

Method
 

Cooking Chicken
  1. In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chicken pieces and season with salt and pepper. Cook until golden brown and cooked through, about 7-10 minutes.
Adding Aromatics
  1. Once the chicken is done, remove it from the skillet and set it aside. In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.
Combining Ingredients
  1. Pour in the can of diced tomatoes (with juices) into the skillet. Stir well and bring to a slight simmer for about 5 minutes.
  2. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
Cooking Pasta
  1. While the spinach wilts, cook the spaghetti according to package instructions in a separate pot. When al dente, reserve a little pasta water, drain, and add it to the skillet.
Combining Everything
  1. Add the cooked chicken back into the skillet with the spinach and tomatoes. Toss everything together, adding reserved pasta water a little at a time until you reach your desired consistency.
Serving
  1. Serve hot, topping with grated Parmesan cheese if desired.

Notes

This dish can be customized with different spices or veggies. Freezing is possible, keep in an airtight container for up to 3 months.
