Method
- Preheat oven to 375°F (190°C). Line three baking sheets with parchment paper and set aside.
- In a medium bowl, mix flour, baking soda, baking powder, and salt. Set aside.
- In a large bowl, cream together butter and sugars until combined.
- Beat in eggs and vanilla until light and fluffy (about 1 minute).
- Mix in the dry ingredients until just combined.
- Add chocolate chips and mix well.
- Roll 2–3 tablespoons of dough into balls and place evenly spaced on prepared cookie sheets.
- Bake for 8–10 minutes, removing when cookies are just barely starting to turn brown.
- Let cookies sit on the baking pan for 5 minutes before transferring to a cooling rack.
Notes
Do not overbake, the cookies should look slightly doughy when removed from the oven, as they firm up while cooling. Reduce oven temperature by 25°F when using convection. Recipe yields 36 cookies using 2 tablespoons of dough per cookie. Metric conversions are provided in the original post.
