Cooking Steps
- Heat olive oil and butter in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, garlic powder, and paprika. Add them to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken and set aside. In the same skillet, add sliced onions and mushrooms, cooking until tender, about 5 minutes.
- Pour in the chicken broth and stir, scraping the bottom of the skillet for flavor.
- If using, add the heavy cream and mix well.
- Return the chicken to the skillet and top with shredded Monterey Jack cheese. Cook until the cheese is melted, about 3-4 minutes.
- Garnish with chopped parsley before serving.
Notes
