  • 1 small onion, thinly sliced
  • 8 oz mushrooms, sliced Use any variety you prefer.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • to taste Salt and black pepper Season to preference.
  • 1/2 cup chicken broth Low-sodium is recommended.
  • 1/4 cup heavy cream Optional for a richer sauce.
  • 1 cup shredded Monterey Jack cheese
  • to taste Fresh parsley, chopped For garnish.

Method
 

Cooking Steps
  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, and paprika. Add them to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken and set aside. In the same skillet, add sliced onions and mushrooms, cooking until tender, about 5 minutes.
  4. Pour in the chicken broth and stir, scraping the bottom of the skillet for flavor.
  5. If using, add the heavy cream and mix well.
  6. Return the chicken to the skillet and top with shredded Monterey Jack cheese. Cook until the cheese is melted, about 3-4 minutes.
  7. Garnish with chopped parsley before serving.

Notes

Drizzle some balsamic glaze for extra flavor enhancement. Customize by adding different cheeses or spices to suit your taste. Serve with a fresh green salad for added crunch and nutrition.
