Preparation
- Preheat the oven according to the tater tot package instructions.
- Spread the frozen tater tots on a baking sheet and bake until golden brown, about 25 minutes.
Cooking
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- In a skillet, heat butter or oil over medium heat and add the diced red onion and bell peppers. Sauté until soft.
- Pour in the egg mixture and scramble until cooked through.
- Once the tater tots are ready, remove them from the oven and top with scrambled eggs.
- Sprinkle cheddar cheese, cooked sausage or bacon, and sliced green onions over the top.
- Return to the oven for a few more minutes until the cheese is melted.
- Serve hot with salsa, sour cream, hot sauce, and avocado on the side.
Notes
Add spices like paprika or cumin for extra flavor. Customize by using your favorite vegetables or proteins. Serve with a sprinkle of fresh herbs for added freshness.
