  • 2 cups cooked chicken, shredded
  • 1 cup corn kernels (fresh or canned)
  • 1 cup cooked rice or quinoa You can use either based on preference
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup diced tomatoes
  • 1 whole avocado, diced
  • 1/4 cup chopped cilantro
  • 1 whole lime, juiced For added flavor
  • to taste Salt and pepper
  • to taste Chili powder (optional) For an added kick

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, corn, rice or quinoa, black beans, diced tomatoes, and avocado.
  2. Drizzle with lime juice, and sprinkle with cilantro, salt, pepper, and chili powder if using.
  3. Toss everything together until well combined.
  4. Serve immediately or refrigerate for meal prep.

Notes

Enhance flavor with a sprinkle of feta cheese on top, and customize with your favorite veggies like bell peppers or jalapeƱos. This recipe easily doubles for larger crowds.
