  • 1 pound ground beef (or turkey)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup beef broth
  • 1 cup water
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • Salt and pepper to taste

Method
 

Cooking
  1. In a large pot over medium heat, brown the ground beef with chopped onion and bell pepper until fully cooked. Drain excess fat.
  2. Add the taco seasoning and stir until well combined.
  3. Pour in the diced tomatoes, black beans, kidney beans, corn, beef broth, and water.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot with your choice of toppings.

Notes

For flavor enhancement, consider adding a squeeze of lime juice before serving. Customize by adding diced jalapeƱos for some heat or using chicken instead of beef for a lighter option. Serve each bowl topped with fresh cilantro and avocado slices for a gourmet touch.
