  • 1 lb Fresh large shrimp, peeled and deveined Fresh is best for this dish; should smell like the sea.
  • 1 lb Frozen shrimp Thaw and drain before using; avoid refreezing.
Fruits
  • 1 cup Fresh pineapple, cut into bite-sized chunks Fresh is preferred; canned is a substitute.
  • 1 large Mango, peeled, pitted, and diced Choose a slightly soft mango for best sweetness.
Sauces and Oils
  • 1 cup Sweet chili sauce Can use store-bought or homemade.
  • 1 tbsp Olive oil Use for sautéing; any neutral oil works.
Aromatics
  • 2 cloves Garlic, minced Avoid burning for best flavor.
  • 2 tbsp Green onions, chopped Add fresh crunch and color.
  • 2 tbsp Chives, snipped Substitute for green onions.

Method
 

Cooking
  1. Heat olive oil in a large pan over medium-high heat.
  2. Add shrimp and cook for 2-3 minutes until they turn pink and opaque.
  3. Stir in minced garlic and sauté for 1 minute until fragrant.
  4. Add pineapple chunks to the pan and cook for another 3-4 minutes until softened.
  5. Pour in sweet chili sauce, stirring to coat shrimp and pineapple, and let simmer for 2 minutes.
  6. Add sliced green onions and toss everything together for another minute.
  7. Remove from heat and serve immediately over rice or noodles.

Notes

Serve in a vibrant bowl for presentation. Pair with jasmine rice or noodles, and garnish with extra green onions or herbs.
