  • 2 tablespoons extra virgin olive oil
  • 1.5 pounds white mushrooms Fresh, cleaned, and stems removed
  • 4 cloves garlic, minced
  • 6 ounces cream cheese Softened
  • ½ cup grated mozzarella
  • ¾ cup bread crumbs
  • ½ cup grated Parmesan
  • 3 tablespoons fresh parsley, chopped
  • 1 ½ tablespoons butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Clean the mushrooms and remove the stems, chop finely.
Cooking
  1. In a skillet, heat olive oil over medium heat.
  2. Add minced garlic and chopped mushroom stems, cooking until softened.
  3. Stir in cream cheese, mozzarella, and season with salt and pepper until well combined.
  4. Remove from heat and add breadcrumbs, Parmesan, and parsley. Mix well.
  5. Place the mushroom caps in a baking dish and fill each with the stuffing mixture.
  6. Drizzle melted butter over stuffed mushrooms, then bake for 25-30 minutes or until golden brown.

Notes

Serve with a fresh salad or a side of crusty bread to soak up all the goodness. Customize with herbs like thyme or rosemary, or add cooked sausage for extra flavor.
