Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the chopped spinach, softened cream cheese, mozzarella, Parmesan, minced garlic, and Italian seasoning. Season with salt and pepper to taste.
- Create a pocket in each chicken breast using a sharp knife. Spoon the filling into each pocket and secure with toothpicks if necessary.
Cooking
- In a skillet, heat olive oil over medium-high heat. Add the stuffed chicken and cook for 4-5 minutes per side until golden brown.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken has an internal temperature of 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing.

Notes
