Ingredients
  

Main Protein
  • 4 pieces Boneless, skinless chicken breasts Tender and great for stuffing. Consider turkey breasts as an alternative.
Aromatics & Vegetables
  • 2 cups Fresh spinach, chopped Alternatives: kale or Swiss chard, sautéed longer for tenderness.
Liquids/Dairy
  • 8 oz Cream cheese, softened You can also use ricotta for a different flavor.
  • 1 cup Mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
Seasoning/Spice Blend
  • 2 cloves Garlic, minced Can substitute with roasted garlic for sweetness.
  • 1 tbsp Italian seasoning Adjust seasoning to taste.
  • to taste Salt and pepper
For Cooking
  • 2 tbsp Olive oil For searing the chicken.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the chopped spinach, softened cream cheese, mozzarella, Parmesan, minced garlic, and Italian seasoning. Season with salt and pepper to taste.
  3. Create a pocket in each chicken breast using a sharp knife. Spoon the filling into each pocket and secure with toothpicks if necessary.
Cooking
  1. In a skillet, heat olive oil over medium-high heat. Add the stuffed chicken and cook for 4-5 minutes per side until golden brown.
  2. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken has an internal temperature of 165°F (74°C).
  3. Let the chicken rest for 5 minutes before slicing.
Serving
  1. Serve with a sprinkle of fresh herbs and enjoy!

Notes

For extra flavor, add sun-dried tomatoes or artichokes to the filling. Customize with spices like red pepper flakes.
