Ingredients
  

Main Protein
  • 2 pieces boneless, skinless chicken breasts Pound to an even thickness for consistent cooking.
Seasoning/Spice Blend
  • 1 tablespoon Italian seasoning Alternatively, use a blend of oregano and basil.
Liquids/Dairy
  • 4 oz cream cheese Soften before mixing for smooth filling.
  • 1 cup mozzarella cheese
  • 1/2 cup Parmesan cheese
Aromatics & Vegetables
  • 1 cup chopped spinach Can use frozen, just thaw and drain well.
  • 1 clove garlic Minced.
Optional Finishing Ingredients
  • 1 tablespoon olive oil Can substitute butter.

Method
 

Preparation
  1. Combine chopped spinach, softened cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper in a bowl until creamy.
Stuffing
  1. Create a pocket in each chicken breast with a sharp knife and fill with the cheese and spinach mixture.
  2. Secure openings with toothpicks.
Searing
  1. Heat olive oil in a skillet and sear stuffed chicken breasts for 3-4 minutes on each side until golden brown.
Cooking
  1. Cover skillet, lower heat, and cook for 20-25 minutes until chicken reaches an internal temperature of 165°F.
  2. Check doneness by slicing into the thickest part; it should no longer be pink.
Serving
  1. Let chicken rest for a few minutes, then remove toothpicks before serving.

Notes

Consider adding sun-dried tomatoes or artichokes to the filling for extra flavor. Customize the cheese blend to include favorites like feta or gouda. Serve with a tangy dipping sauce for enhanced flavor.
