  • 2 cups corn (fresh or frozen) Fresh is preferable but frozen works well.
  • 2 cups cooked rice Use white or brown rice based on preference.
  • 1 each avocado, diced Choose a ripe avocado for best flavor.
  • 2 tablespoons lime juice Freshly squeezed lime juice is recommended.
  • to taste Salt and pepper Adjust according to your taste.
  • for garnish Fresh cilantro Optional but adds freshness.

Method
 

Cooking the Chicken
  1. Season the chicken breast with salt and pepper.
  2. Cook in a skillet over medium-high heat until cooked through, about 7-10 minutes.
  3. Remove from heat and slice.
Cooking the Corn
  1. In the same skillet, add the corn and cook until lightly charred, about 5 minutes.
Assembling the Bowl
  1. In a large bowl, combine the cooked rice, corn, sliced chicken, diced avocado, and lime juice.
  2. Toss to combine.
  3. Serve the rice bowl warm, garnished with fresh cilantro if desired.
