Ingredients
  

For the Ice Cream
  • 1.5 cups strawberries, hulled and diced Ripe strawberries for best flavor.
  • 2 Tbsp honey
  • 0.5 cup granulated sugar Adjust sweetness to taste.
  • 1 tsp lemon juice Enhances strawberry flavor.
  • 1 cup heavy whipping cream For creaminess.
  • 0.5 cup half and half
  • 1 tsp vanilla extract

Method
 

Preparation
  1. In a large bowl, mix strawberries, honey, sugar, and lemon juice.
  2. Allow to sit for 15-20 minutes, or until the strawberries have released their juices.
  3. Mash the mixture with a potato masher, fork, or pastry cutter until there are no longer any large strawberry pieces.
  4. If you prefer smooth ice cream, blend the mixture instead.
  5. To the strawberries, mix in the heavy cream, half and half, and vanilla extract. Stir just until combined.
Churning
  1. Pour the mixture into your ice cream maker, and follow your manufacturer’s instructions.
  2. Churn the mixture for about 15-20 minutes until soft-serve consistency.
  3. For a thicker ice cream, freeze in an airtight container for 3-4 hours.
Serving
  1. Allow the ice cream to sit at room temperature for about 5-10 minutes to soften before serving.
  2. Scoop into colorful bowls or cones.
  3. Top with fresh strawberries or chocolate sauce if desired.

Notes

Enhance flavor with a splash of strawberry extract. You can also customize with add-ins like chocolate chips or nuts. Serve with a dollop of whipped cream for extra indulgence.
