Cake Ingredients
  • 1 box chocolate cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup fresh strawberries, chopped
Cream Cheese Layer
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
Toppings
  • 1 cup shredded coconut
  • 1/2 cup chopped nuts (optional) Almonds, walnuts, or pecans can be used.
  • to taste Whipped cream for serving (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, mix the chocolate cake mix, water, vegetable oil, and eggs until well combined.
  3. Pour half of the batter into the prepared baking dish.
Cream Cheese Layer
  1. In a separate bowl, beat the softened cream cheese and powdered sugar until smooth.
  2. Spoon dollops of the cream cheese mixture over the batter, and then sprinkle the chopped strawberries, shredded coconut, and nuts over the top.
Combine and Bake
  1. Pour the remaining batter over everything in the dish.
  2. Bake for 30-35 minutes, until a toothpick inserted comes out mostly clean.
  3. Let it cool before serving with whipped cream if desired.

Notes

Add a splash of vanilla extract for extra flavor. This cake can be customized with other fruits like raspberries or blueberries. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
