Ingredients
  

For the crust
  • 1.5 cups Graham cracker crumbs About 10 full sheets, crushed into fine crumbs.
  • 6 tablespoons Butter, melted Use coconut oil as an alternative.
  • 2 tablespoons Sugar Can use brown sugar for a deeper flavor.
  • 1 pinch Salt Enhances the crust's flavor.
Cheesecake filling
  • 16 oz Cream cheese, room temperature Can substitute with mascarpone.
  • 1 cup Powdered sugar Sugar substitute can be used, but may affect texture.
  • 1 cup Heavy cream Whipped to stiff peaks. Coconut cream is an alternative.
  • 1 teaspoon Vanilla extract Almond extract can be used for a twist.
  • 1 tablespoon Lemon juice Brightens flavors.
  • 2 cups Strawberries, chopped Fresh is best. Alternatives are raspberries or blueberries.
For the topping
  • 20 pieces Golden Oreos or vanilla cookies, crushed Different flavored cookies can be used for variety.
  • 0.5 cups Freeze-dried strawberries, crushed Adds crunch and flavor.
  • 3 tablespoons Butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Mix until evenly moistened.
  3. Press the mixture into the bottom of a 9-inch springform pan firmly.
Baking the crust
  1. Place the crust in the preheated oven and bake for 10 minutes until slightly golden. Remove and let it cool.
Mixing the cheesecake filling
  1. In a large bowl, combine cream cheese and powdered sugar. Beat until smooth and creamy.
  2. Add heavy cream, vanilla extract, and lemon juice. Mix until well combined.
Folding in strawberries
  1. Gently fold in chopped strawberries into the cheesecake mixture.
Assembling and chilling
  1. Pour the cheesecake filling over the cooled crust and smooth the top.
  2. Cover and refrigerate for at least 2 hours or until set.
Preparing the topping
  1. In a bowl, crush Golden Oreos and mix with crushed freeze-dried strawberries and melted butter.
  2. Sprinkle this mixture on top of the chilled cheesecake before serving.
Serving
  1. Slice the cheesecake and serve cold. Garnish with extra strawberries if desired.

Notes

For best flavor, consider adding lemon zest to the cream cheese mixture. Can be personalized with other fruits like blueberries or cherries.
