Ingredients
  

Cookie Base
  • 1 cup Butter, softened
  • ¼ cup Brown sugar, packed
  • 1 cup Granulated sugar
  • 1 large Egg, room temperature
  • 2 teaspoons Vanilla extract
  • ½ teaspoon Strawberry extract
  • 1 teaspoon Red or pink food coloring (optional) For coloring the cookies
  • cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Baking powder
  • ¼ teaspoon Salt Omit if using salted butter
Cream Cheese Filling
  • 1 cup Cream cheese, softened
  • cup Powdered sugar
  • 1 teaspoon Vanilla extract
Topping
  • 1 cup Granulated sugar For rolling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg, vanilla extract, and strawberry extract, mixing well.
  3. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. Gradually add the flour mixture to the wet ingredients until just combined. If using, add food coloring to achieve your desired pink shade.
Filling Preparation
  1. For the cream cheese filling, mix the softened cream cheese, powdered sugar, and vanilla extract in a separate bowl until smooth.
Assembling the Cookies
  1. To assemble, scoop a tablespoon of cookie dough into your palm, flatten slightly, and add about a teaspoon of cream cheese filling in the center. Form the dough around the filling, sealing it well.
  2. Roll the filled cookie ball in granulated sugar and place it on the prepared baking sheet.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve warm or chilled with a scoop of ice cream for extra indulgence. Optionally, add chopped strawberries to the dough for a fruity twist.
