Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg, vanilla extract, and strawberry extract, mixing well.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the flour mixture to the wet ingredients until just combined. If using, add food coloring to achieve your desired pink shade.
Filling Preparation
- For the cream cheese filling, mix the softened cream cheese, powdered sugar, and vanilla extract in a separate bowl until smooth.
Assembling the Cookies
- To assemble, scoop a tablespoon of cookie dough into your palm, flatten slightly, and add about a teaspoon of cream cheese filling in the center. Form the dough around the filling, sealing it well.
- Roll the filled cookie ball in granulated sugar and place it on the prepared baking sheet.
Baking
- Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Serve warm or chilled with a scoop of ice cream for extra indulgence. Optionally, add chopped strawberries to the dough for a fruity twist.
