Preparation
- Thaw frozen peas in warm water for a few minutes; shell and rinse fresh peas.
- In a food processor, combine peas, herbs, lemon zest, lemon juice, chives, salt, and pepper. Blend until smooth.
- While blending, slowly pour in olive oil until creamy. Adjust oil for desired consistency.
- Taste and adjust seasoning if necessary.
- Transfer pesto to a bowl and serve immediately.
Notes
This pesto can be served with pasta, grilled vegetables, or as a spread. Can freeze in an ice cube tray for longer storage.
