  • 2 cups peas (frozen and thawed or fresh) Fresh peas add sweetness and vibrant color; frozen peas offer convenience.
  • 1/2 cup packed mixed herbs (mint, tarragon, or dill) Use fresh herbs for best flavor; alternative: basil or parsley.
  • 1 each lemon (zest and juice) Zest before juicing to avoid mess; lime juice can be used for a different flavor.
  • 2 1/2 tablespoons lemon juice
  • 1 tablespoon minced chives or green onion Chives can be substituted with green onions.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
  • 1/8 cup olive oil Extra virgin olive oil is preferred; avocado oil is a good alternative.

Method
 

Preparation
  1. Thaw frozen peas in warm water for a few minutes; shell and rinse fresh peas.
  2. In a food processor, combine peas, herbs, lemon zest, lemon juice, chives, salt, and pepper. Blend until smooth.
  3. While blending, slowly pour in olive oil until creamy. Adjust oil for desired consistency.
  4. Taste and adjust seasoning if necessary.
  5. Transfer pesto to a bowl and serve immediately.

Notes

This pesto can be served with pasta, grilled vegetables, or as a spread. Can freeze in an ice cube tray for longer storage.
