Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, and a pinch of salt and pepper.
- Gently pound the chicken breasts to an even thickness for even cooking.
- Take a generous amount of the spinach filling and place it in the center of each chicken breast. Fold the edges over to enclose the filling.
- Use toothpicks or kitchen twine to hold the chicken closed if needed.
Cooking
- In a skillet, heat olive oil over medium-high heat. Add the stuffed chicken and sear for about 3-4 minutes on each side until golden brown.
- Transfer the seared chicken breasts to a baking dish, and bake in the preheated oven for 25-30 minutes until they are fully cooked (165°F internal temperature).
- Allow the chicken to rest for 5 minutes before serving, to keep it juicy.
