  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, and a pinch of salt and pepper.
  3. Gently pound the chicken breasts to an even thickness for even cooking.
  4. Take a generous amount of the spinach filling and place it in the center of each chicken breast. Fold the edges over to enclose the filling.
  5. Use toothpicks or kitchen twine to hold the chicken closed if needed.
Cooking
  1. In a skillet, heat olive oil over medium-high heat. Add the stuffed chicken and sear for about 3-4 minutes on each side until golden brown.
  2. Transfer the seared chicken breasts to a baking dish, and bake in the preheated oven for 25-30 minutes until they are fully cooked (165°F internal temperature).
  3. Allow the chicken to rest for 5 minutes before serving, to keep it juicy.

Notes

Slice the chicken breast in half to showcase the beautiful filling. Serve with a side of roasted vegetables or a fresh salad for a complete meal. Enjoy with a glass of white wine or a refreshing sparkling water.
