Ingredients
  

For the filling
  • 1 bag frozen chopped spinach (10 oz), thawed and squeezed dry
  • 1 block cream cheese (8 oz), softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • pinch red pepper flakes (optional for heat)
For the pinwheels
  • 1 sheet puff pastry, thawed but still cold
  • 1 egg for brushing

Method
 

Preparation
  1. In a bowl, combine the cream cheese, Parmesan, mayonnaise, garlic powder, onion powder, and black pepper. Add in the spinach and mix until smooth and evenly combined.
  2. Lightly flour your countertop and roll out the puff pastry. Spread the spinach mixture across it, leaving one long edge empty to seal later. Roll it tightly like a jelly roll.
  3. Wrap the log in plastic wrap and refrigerate for 30 minutes to firm up. Preheat your oven to 400°F while waiting.
Baking
  1. Remove the log from the fridge and slice it into half-inch rounds. Place them on a parchment-lined baking sheet.
  2. Beat the egg with a splash of water and brush it on top of each pinwheel.
  3. Bake for 15-20 minutes until puffed and golden brown.

Notes

Serve warm for the best taste, but they're also delicious at room temperature! Customize with fresh herbs or additional veggies.
