Spicy Cheesy Southwest Cowboy Queso

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves minced garlic
  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (10 ounces) diced tomatoes with green chiles, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 package (16 ounces) Velveeta cheese, cubed
  • 1 cup shredded cheddar cheese
  • 2 jalapeƱos, diced (remove seeds for less heat)
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced green onions
  • Tortilla chips for serving

Method
 

Cooking
  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic. Cook until the onion is soft, about 3-5 minutes.
  3. Add ground beef to the pot. Cook until browned, breaking it apart as you go. Drain excess fat.
  4. Stir in cumin, chili powder, smoked paprika, salt, and black pepper. Cook for another 1-2 minutes until fragrant.
  5. Add diced tomatoes, black beans, and corn. Mix well.
  6. Stir in Velveeta cheese and shredded cheddar. Cook on low heat until melted and creamy, stirring frequently.
  7. Mix in diced jalapeƱos, chopped cilantro, and sliced green onions.
  8. Remove from heat and transfer to a serving bowl.

Notes

Add more spice with hot sauce or cayenne pepper for zesty heat. Feel free to swap in different cheeses or beans for a unique twist!
