Preparation
- In a large bowl, combine the shredded chicken, black beans, corn, and diced red bell pepper.
- Season the mixture with salt and pepper. Mix well until combined.
Assembly
- Lay a tortilla flat and spread a spoonful of ranch dressing or salsa on it.
- Place a portion of the chicken mixture and sliced avocado in the center of the tortilla.
- Sprinkle shredded cheese on top of the mixture.
- Fold in the sides of the tortilla, then roll it tightly from the bottom up to enclose the filling.
- Repeat with the remaining tortillas and filling.
Serving
- Slice the wraps in half and serve with additional dressing or salsa if desired.
