Southwest Chicken Wraps

Ingredients
  

Main Ingredients
  • 2 cups cooked chicken, shredded Use pre-cooked or rotisserie chicken for convenience.
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 each red bell pepper, diced
  • 1 each avocado, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas or wraps Flour or whole wheat tortillas work well.
  • 1/2 cup ranch dressing or salsa Choose based on taste preference.
  • to taste Salt and pepper Adjust based on preference.

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, black beans, corn, and diced red bell pepper.
  2. Season the mixture with salt and pepper. Mix well until combined.
Assembly
  1. Lay a tortilla flat and spread a spoonful of ranch dressing or salsa on it.
  2. Place a portion of the chicken mixture and sliced avocado in the center of the tortilla.
  3. Sprinkle shredded cheese on top of the mixture.
  4. Fold in the sides of the tortilla, then roll it tightly from the bottom up to enclose the filling.
  5. Repeat with the remaining tortillas and filling.
Serving
  1. Slice the wraps in half and serve with additional dressing or salsa if desired.

Notes

These wraps are customizable; feel free to adjust the ingredients according to your preferences. They can also be grilled or toasted for a crispy finish.
