Preparation
- Combine your sourdough starter, flour, olive oil, and salt in a large mixing bowl. Use a wooden spoon or your hands to mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
- Wrap the kneaded dough in plastic wrap or a clean towel and let it rest for 15 minutes.
- Once rested, divide the dough into 8 equal pieces and roll each piece into a ball.
- Roll each ball into a thin circle about 6 inches in diameter on a lightly floured surface.
Cooking
- Preheat a non-stick skillet over medium-high heat.
- Place one tortilla in the skillet and cook for 30-45 seconds on each side or until brown spots appear.
Notes
Serve warm stacked on a platter, wrapped in a kitchen towel to keep warm. Enjoy with various fillings like grilled chicken, roasted veggies, or bean salad.
