Ingredients
  

For the Tortillas
  • 1 cup sourdough starter discard (unfed) Use unfed starter for the best results.
  • 1.5 cups all-purpose flour Measure precisely for the right consistency. Whole wheat can be used for a nuttier flavor.
  • 2 tablespoons olive oil Make sure it’s at room temperature for easier mixing.
  • 0.5 teaspoons salt Mix with dry ingredients before adding wet ones.
  • 2-4 tablespoons water Add until the dough is smooth but not sticky. Lukewarm water is recommended.

Preparation
  1. Combine your sourdough starter, flour, olive oil, and salt in a large mixing bowl. Use a wooden spoon or your hands to mix until a shaggy dough forms.
  2. Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  3. Wrap the kneaded dough in plastic wrap or a clean towel and let it rest for 15 minutes.
  4. Once rested, divide the dough into 8 equal pieces and roll each piece into a ball.
  5. Roll each ball into a thin circle about 6 inches in diameter on a lightly floured surface.
Cooking
  1. Preheat a non-stick skillet over medium-high heat.
  2. Place one tortilla in the skillet and cook for 30-45 seconds on each side or until brown spots appear.

Notes

Serve warm stacked on a platter, wrapped in a kitchen towel to keep warm. Enjoy with various fillings like grilled chicken, roasted veggies, or bean salad.
