  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, melt the butter over medium heat.
  3. Add the chicken breasts and sear until golden brown on both sides, about 4-5 minutes per side.
  4. Remove the chicken and set aside.
  5. In the same skillet, add the rice and stir for 1-2 minutes.
  6. Pour in the chicken broth and bring to a simmer.
  7. Return the chicken to the skillet, cover, and transfer to the oven.
  8. Bake for 25-30 minutes until the chicken is cooked through.
  9. Once done, remove from the oven, stir in milk, cheddar, and Parmesan until melted.
  10. Serve warm and enjoy!
