  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth Can substitute with vegetable broth
  • 2 tablespoons unsalted butter For making the roux
  • 1.5 cups whole milk
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper

Method
 

Preparation
  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the chicken for 5-7 minutes on each side until golden brown.
  4. Remove the chicken from the skillet.
  5. In a saucepan, boil chicken broth with a pinch of salt.
  6. Add the rice, reduce heat, cover, and simmer for 15-20 minutes until tender.
Sauce Preparation
  1. In the same skillet, melt butter over medium heat.
  2. Whisk in flour to form a roux.
  3. Gradually add milk while whisking until smooth.
  4. Stir in spices and cheeses until melted.
Serving
  1. Return the chicken to the skillet.
  2. Spoon the sauce over the chicken and serve hot over rice.

Notes

For flavor enhancement, add fresh herbs like parsley or thyme. Customize with favorite vegetables.
