- 1 lb boneless chicken breasts cubed
- 12 oz beef smoked sausage sliced
- 12 oz penne pasta
- 3 tbsp olive oil divided
- 1 medium onion diced
- 3 garlic cloves minced
- 1 red bell pepper diced
- 2 tbsp ranch seasoning
- 1 tsp smoked paprika
- ½ tsp black pepper
- 4 cups chicken broth
- 1 cup heavy cream
- 8 oz smoked cheddar grated
- ¼ cup cream cheese
- Green onions and parsley for garnish
Season chicken with salt, pepper, and 1 tbsp ranch seasoning. Brown in 1 tbsp oil (5-6 min). Add sliced sausage, cook 2-3 min more. Remove to plate.
In same pot, sauté onions in remaining oil (3 min). Add garlic and bell pepper (2 min). Stir in spices and remaining ranch seasoning.
Add butter, then pour in broth and bring to boil. Add pasta, cook until al dente (10-12 min). Reserve ½ cup cooking liquid.
Reduce heat to low. Stir in cream and cream cheese until melted. Gradually add smoked cheddar until smooth.
Return chicken and sausage to pot. Combine and heat through. Add reserved cooking liquid if needed for consistency.
Garnish with green onions and parsley. Serve immediately.
