Ingredients
  

  • 1 lb boneless chicken breasts cubed
  • 12 oz beef smoked sausage sliced
  • 12 oz penne pasta
  • 3 tbsp olive oil divided
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 2 tbsp ranch seasoning
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 oz smoked cheddar grated
  • ¼ cup cream cheese
  • Green onions and parsley for garnish

Instructions
 

  • Season chicken with salt, pepper, and 1 tbsp ranch seasoning. Brown in 1 tbsp oil (5-6 min). Add sliced sausage, cook 2-3 min more. Remove to plate.
  • In same pot, sauté onions in remaining oil (3 min). Add garlic and bell pepper (2 min). Stir in spices and remaining ranch seasoning.
  • Add butter, then pour in broth and bring to boil. Add pasta, cook until al dente (10-12 min). Reserve ½ cup cooking liquid.
  • Reduce heat to low. Stir in cream and cream cheese until melted. Gradually add smoked cheddar until smooth.
  • Return chicken and sausage to pot. Combine and heat through. Add reserved cooking liquid if needed for consistency.
  • Garnish with green onions and parsley. Serve immediately.
