  • 3 cups beef broth For rich cooking liquid.
  • 2 tbsp Worcestershire sauce Enhances depth of flavor.
  • 2 tbsp tomato paste Optional for deeper flavor.
  • 3 cloves garlic, minced Adds aromatic flavor.
  • 1 tsp salt Plus more to taste.
  • 1 tsp black pepper For seasoning.
  • 1 tsp dried thyme Classic herb for flavor.
  • 1 tsp dried rosemary Enhances the dish's aroma.
  • 2 bay leaves Adds subtle flavor.
  • 2 tbsp cornstarch + 2 tbsp cold water Optional for thickening gravy.

Method
 

Preparation
  1. Chop the vegetables and season the beef. Cut the potatoes into large chunks and slice the onion if using.
Searing
  1. In a hot skillet, sear the beef on all sides until browned, about 3-4 minutes per side.
Loading the Slow Cooker
  1. Transfer the beef to the slow cooker. Layer in the potatoes, carrots, and onion.
Adding Liquids and Aromatics
  1. Pour in beef broth and Worcestershire sauce, then add garlic, thyme, and rosemary.
Cooking
  1. Cover the slow cooker and set it to low for 8 hours. It's ready when the meat is fork-tender.
Thickening the Gravy (Optional)
  1. In the last 30 minutes, mix cornstarch with cold water and stir into the broth to thicken.
Serving
  1. Remove the bay leaves and carve the roast. Serve with vegetables and gravy.

Notes

For enhanced flavor, marinate the roast overnight. Customize with seasonal vegetables and serve with creamy mashed potatoes.
