  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup chicken broth For added flavor
  • 2 pieces lemons Juiced and zested
  • 2 tablespoons olive oil For cooking
  • 2 teaspoons dried thyme For flavor
  • 2 teaspoons dried rosemary For flavor
  • 1 teaspoon garlic powder
  • to taste none salt and pepper To enhance the flavor
For the Rice
  • 2 cups white rice For serving
  • 4 cups water or additional chicken broth For cooking the rice
  • to taste none fresh parsley For garnish

Method
 

Preparation
  1. In the slow cooker, combine chicken breasts, chicken broth, lemon juice, lemon zest, olive oil, thyme, rosemary, garlic powder, salt, and pepper.
Cooking
  1. Cook on low for 6-7 hours or until chicken is cooked through and tender.
  2. About 30 minutes before serving, prepare the rice.
  3. In a pot, combine rice and water or additional broth, bring to a boil, then reduce heat and cover to simmer for 15-20 minutes until rice is cooked.
Serving
  1. Serve the chicken over fluffy rice and garnish with fresh parsley.

Notes

Serve the chicken on top of the rice, drizzling the lemony sauce over the dish. Pair with steamed vegetables or a fresh salad for added color and crunch. This meal will surely be a hit with everyone!
