Ingredients
  

Main Protein
  • 2 pounds boneless, skinless chicken thighs or breasts Cut into bite-sized pieces.
Starch/Pasta
  • 4 medium potatoes, peeled and cubed Cut into uniform pieces.
Seasoning/Spice Blend
  • 1 teaspoon dried thyme Essential for depth of flavor.
  • 2 pieces bay leaves Remove before serving.
Liquids/Dairy
  • 4 cups low-sodium chicken broth Avoid using salted broth.
  • 1 tablespoon tomato paste Adds a slightly tangy kick.
Aromatics & Vegetables
  • 3 pieces carrots, diced Add directly into the pot.
  • 3 pieces celery stalks, diced Add directly into the pot.
  • 1 piece onion, diced Add directly into the pot.
  • 4 cloves minced garlic Add directly into the pot.
Optional Finishing Ingredients
  • 1/4 cup all-purpose flour Add towards the end of cooking for thickness.
  • 1 tablespoon fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Wash and chop all your selected vegetables and chicken. This front-end prep ensures everything cooks evenly and enhances flavor.
  2. Add chicken, vegetables, spices, and broth to the slow cooker. Layering allows flavors to meld beautifully as they cook.
Cooking
  1. Cover and set the slow cooker on low for 6-7 hours or high for 4-5 hours.
  2. About 30 minutes before serving, check the chicken for tenderness.
  3. If you prefer a thicker stew, mix flour with a little broth, then stir it into the stew.
  4. Before serving, taste and adjust salt and pepper as necessary.
Serving
  1. Ladle the stew into bowls and garnish with chopped parsley.

Notes

Enhance flavors by sautéing the garlic and onion before adding them to the slow cooker. Customize with different vegetables or spices.
