  • 4 medium potatoes, peeled and diced
  • 2 pieces leeks, white and light green parts only, cleaned and sliced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Method

  1. In a large pot, heat the olive oil over medium heat for 2-3 minutes.
  2. Add the sliced leeks and sauté until soft, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute, being careful not to brown it.
  4. Add the diced potatoes and vegetable broth, bringing the mixture to a boil.
  5. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  6. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only part of the soup.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

Serve in warm bowls for a comforting touch. Pair with crusty bread or a fresh salad for a complete meal.
