- Cook the rotini noodles according to package instructions. Drain and set aside to cool.
- In a large bowl, mix together the chopped dill pickles, diced colby jack cheese, minced onion, and fresh dill.
- In a separate bowl, combine the brine, mayonnaise, sour cream, dill pickle liquid, salt, and pepper until smooth.
- Add the cooled noodles to the pickle mixture, then pour the dressing over it. Toss everything together until well combined.
- Cover the bowl and chill in the refrigerator for at least 1 hour before serving.
Notes
This salad can be customized with additional ingredients like diced red bell peppers or chopped celery. It lasts up to 3 days in the refrigerator and can be frozen for up to 1 month.
