Pasta Salad Ingredients
  • 1 box 1 box (16 oz) rotini noodles
  • 2 cups 2 cups chopped small dill pickles
  • 8 oz 8 oz colby jack cheese, diced
  • 1 small 1 small white onion, minced
Dressing Ingredients
  • 1/3 cup 1/3 cup brine from dill pickles
  • 1 cup 1 cup mayonnaise
  • 1/2 cup 1/2 cup sour cream
  • 1/3 cup 1/3 cup dill pickle liquid
  • 2 tbsp 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
  • 1/4 tsp 1/4 tsp salt
  • 1/4 tsp 1/4 tsp ground black pepper

Method
 

Preparation
  1. Cook the rotini noodles according to package instructions. Drain and set aside to cool.
  2. In a large bowl, mix together the chopped dill pickles, diced colby jack cheese, minced onion, and fresh dill.
  3. In a separate bowl, combine the brine, mayonnaise, sour cream, dill pickle liquid, salt, and pepper until smooth.
  4. Add the cooled noodles to the pickle mixture, then pour the dressing over it. Toss everything together until well combined.
  5. Cover the bowl and chill in the refrigerator for at least 1 hour before serving.

Notes

This salad can be customized with additional ingredients like diced red bell peppers or chopped celery. It lasts up to 3 days in the refrigerator and can be frozen for up to 1 month.
