Pancake Base
  • 2 cups All-Purpose Flour Sifted for a lighter texture.
  • 2 tablespoons Sugar Adjust based on sweetness preference.
  • 1 tablespoon Baking Powder Ensure it's fresh for best results.
  • ½ teaspoon Salt Balances the sweetness.
  • 2 cups Milk Bring to room temperature for easier mixing.
  • 2 Eggs Whisk until frothy for fluffiness.
  • 4 tablespoons Butter (melted) Adds richness to the batter.
  • 1 teaspoon Vanilla Extract (optional) For enhanced flavor.
Filling
  • 1 pound Breakfast Sausage Cook until browned and crumbly.
  • 1 cup Cheddar Cheese (shredded) Can substitute with pepper jack for spice.
  • 4 large Eggs (scrambled) Cooked with butter.

Method
 

Preparation
  1. Cook the breakfast sausage in a skillet over medium heat for about 5-7 minutes until browned and crumbly. Drain excess grease and set aside.
  2. In a bowl, mix flour, sugar, baking powder, and salt. In another bowl, whisk milk, eggs, melted butter, and vanilla extract if using.
  3. Carefully combine wet and dry ingredients until just mixed, taking care not to overmix.
Cooking
  1. Heat a skillet over medium heat and add a little butter.
  2. Pour ¼ cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes until bubbles form and edges look set.
  3. Once pancakes are golden, place a layer of cooked sausage, a small scoop of scrambled eggs, and a sprinkle of cheese on half of the pancake.
  4. Fold the pancake over to cover the filling.
  5. Cook for an additional 2 minutes on each side until cheese is melted and pancake is fully cooked.
  6. Transfer stuffed pancakes to a plate and drizzle with maple syrup.
Serving
  1. Stack pancakes on a plate and serve warm with butter and maple syrup.
  2. Add extra sausage or seasonal fruit on the side.
