Preparation
- Cook the breakfast sausage in a skillet over medium heat for about 5-7 minutes until browned and crumbly. Drain excess grease and set aside.
- In a bowl, mix flour, sugar, baking powder, and salt. In another bowl, whisk milk, eggs, melted butter, and vanilla extract if using.
- Carefully combine wet and dry ingredients until just mixed, taking care not to overmix.
Cooking
- Heat a skillet over medium heat and add a little butter.
- Pour ¼ cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes until bubbles form and edges look set.
- Once pancakes are golden, place a layer of cooked sausage, a small scoop of scrambled eggs, and a sprinkle of cheese on half of the pancake.
- Fold the pancake over to cover the filling.
- Cook for an additional 2 minutes on each side until cheese is melted and pancake is fully cooked.
- Transfer stuffed pancakes to a plate and drizzle with maple syrup.
Serving
- Stack pancakes on a plate and serve warm with butter and maple syrup.
- Add extra sausage or seasonal fruit on the side.
