Preparation
- In a large pot, heat olive oil over medium heat.
- Add onions, garlic, carrots, and celery. Sauté until vegetables are soft, about 5-7 minutes.
- Pour in the chicken broth and bring to a simmer.
Cooking
- Add the shredded rotisserie chicken and gnocchi to the pot. Cook until the gnocchi float to the top, about 2-3 minutes.
- Stir in the spinach and cook until wilted.
- Season with salt and pepper to taste and serve warm.
Notes
For added flavor, squeeze a bit of lemon juice or sprinkle Parmesan cheese on top before serving. Customize by adding other vegetables like zucchini or sweet potatoes.
