  • 1 whole rotisserie chicken, shredded
  • 1 package gnocchi
  • 4 cups chicken broth
  • 2 cups spinach
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 whole onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, garlic, carrots, and celery. Sauté until vegetables are soft, about 5-7 minutes.
  3. Pour in the chicken broth and bring to a simmer.
Cooking
  1. Add the shredded rotisserie chicken and gnocchi to the pot. Cook until the gnocchi float to the top, about 2-3 minutes.
  2. Stir in the spinach and cook until wilted.
  3. Season with salt and pepper to taste and serve warm.

Notes

For added flavor, squeeze a bit of lemon juice or sprinkle Parmesan cheese on top before serving. Customize by adding other vegetables like zucchini or sweet potatoes.
