Preparation
- Preheat your oven to 425°F (220°C).
- Wash, peel, and chop the sweet potatoes into evenly sized cubes or wedges.
- In a large bowl, add sweet potato pieces, olive oil, salt, black pepper, and garlic powder. Toss everything thoroughly until the sweet potatoes are well coated.
Cooking
- Line a baking sheet with parchment paper and spread the sweet potatoes in a single layer.
- Roast in the preheated oven for about 25-30 minutes, stirring halfway through for even browning.
- If desired, melt butter mixed with minced garlic and herbs, then drizzle it over the potatoes before serving.
- Remove them from the oven, let cool slightly, and transfer to a dish. Serve warm.
