Preparation
- Preheat your oven to 425°F (220°C). This high temperature will help the sweet potatoes caramelize.
- Slice 2 large sweet potatoes into 1/2-inch rounds, aiming for uniform sizes.
- Place the sweet potato rounds on a baking sheet. Drizzle with 2 tablespoons of olive oil, then sprinkle with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of ground cinnamon if using. Toss to coat well.
Cooking
- Spread the sweet potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway through.
- Once done, remove them from the oven and drizzle with 2 tablespoons of honey. Sprinkle 1/3 cup of crumbled feta cheese over the top.
- Finish by sprinkling 1 tablespoon of chopped fresh parsley for a burst of color and flavor.
- Serve warm.
