Ingredients
  

For the Chicken
  • 1 whole whole chicken
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 whole lemon, juiced
  • Salt and pepper to taste
For the Vegetables
  • 2 cups carrots, chopped
  • 2 cups potatoes, chopped
  • 1 cup onions, sliced
  • 2 cups squash, chopped
  • Fresh herbs (such as rosemary or thyme)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix olive oil, garlic, lemon juice, salt, and pepper.
  3. Rub the mixture all over the whole chicken and place it in a roasting pan.
  4. Arrange the chopped carrots, potatoes, onions, and squash around the chicken.
  5. Sprinkle fresh herbs over the vegetables and chicken.
Cooking
  1. Roast in the preheated oven for 1 hour and 15 minutes, or until the chicken is golden brown and juices run clear.
  2. Let it rest for 10 minutes before carving. Serve with the roasted vegetables.
