Ingredients
  

For the Red Velvet Dough:
  • 4 cups all-purpose flour plus extra for dusting
  • teaspoons active dry yeast 1 packet
  • ¾ cup warm milk 110-115°F
  • ¼ cup granulated sugar
  • cup unsalted butter melted
  • 2 large eggs room temperature
  • 2 tablespoons cocoa powder
  • tablespoons red food coloring gel preferred
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
For the Cinnamon Filling:
  • ¾ cup packed brown sugar
  • ¼ cup granulated sugar
  • 2 tablespoons ground cinnamon
  • ½ cup unsalted butter softened
  • Pinch of salt
For the Cream Cheese Glaze:
  • 4 oz cream cheese softened
  • 2 tablespoons unsalted butter softened
  • 1 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk
  • Pinch of salt

Method
 

  1. Mix warm milk, 1 tbsp sugar, and yeast. Let sit until foamy (5-10 min).
  2. Combine remaining sugar, butter, eggs, vanilla, and food coloring with yeast mixture. Add flour, cocoa, and salt to form dough.
  3. Knead until elastic. Let rise until doubled (60-90 min).
  4. Mix brown sugar, sugar, and cinnamon for filling.
  5. Roll dough into 18×14-inch rectangle. Spread with butter and sprinkle with filling.
  6. Roll tightly from long edge and cut into 12 slices.
  7. Place in greased dish. Rise again (30-45 min).
  8. Bake at 350°F for 20-25 minutes.
  9. Beat cream cheese, butter, powdered sugar, vanilla, and milk for glaze.
  10. Spread glaze over warm rolls.
