  • 1 package kielbasa, sliced You can use smoked or fresh kielbasa.
  • 1 package tortellini Fresh or frozen tortellini can be used.
  • 4 cups chicken broth Low-sodium broth is recommended.
  • 1 can diced tomatoes With juice for added flavor.
  • 1 cup carrots, diced Fresh carrots preferred.
  • 1 cup spinach or kale Choose based on preference.
  • 1 onion, chopped Yellow or white onion works well.
  • 2 cloves garlic, minced Fresh minced garlic is ideal.
  • Salt and pepper to taste
  • 1 tablespoon olive oil For sautéing.

Method
 

Cooking Instructions
  1. In a large pot, heat a little olive oil over medium heat and sauté the onion and garlic until fragrant.
  2. Add the sliced kielbasa and cook until browned.
  3. Add the diced carrots and cook for a few more minutes.
  4. Pour in the chicken broth and diced tomatoes, and bring to a simmer.
  5. Add the tortellini and cook according to package instructions until tender.
  6. Stir in the spinach or kale and cook until wilted.
  7. Season with salt and pepper to taste. Serve hot.

Notes

Consider adding a splash of lemon juice for a bright flavor. Customize with your favorite vegetables or beans and garnish with fresh herbs for an extra pop of flavor.
