  • 4 pieces bagels (plain, whole wheat, or everything)
  • 2 large eggs Fresh eggs recommended
  • 6 tablespoons heavy cream
  • 1/4 cup shredded cheddar cheese
  • 4 slices cooked bacon (chopped)
  • 1/4 cup sautéed spinach or bell peppers Can use either or both
  • Salt and pepper (to taste)
  • Optional: chives for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
  3. Stir in the cheddar cheese, cooked bacon, and sautéed spinach or bell peppers.
  4. Cut the bagels in half and hollow out the centers, leaving a thin edge.
  5. Spoon the egg mixture evenly into each bagel half.
  6. Place the stuffed bagels on a baking tray.
Cooking
  1. Bake for 15-20 minutes or until the egg is set and the tops are golden.
  2. Let cool slightly before serving. Garnish with chives if desired.

Notes

For added flavor, sprinkle some garlic powder or herbs into the egg mixture. Customize by swapping bacon for sausage or adding other vegetables like mushrooms or tomatoes. Serve with a side of your favorite dipping sauce for a fun twist.
