Ingredients
  

Noodles and Vegetables
  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 4 cups coleslaw mix
Pork and Seasoning
  • 1 lb ground pork
  • 1 tbsp peanut oil
  • 1/4 cup sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tbsp mirin
  • 2 tbsp dark soy sauce
  • 1 tbsp minced garlic
  • 2 tsp grated ginger
  • 1 tsp sesame oil
  • 1/2 tsp sriracha

Method
 

Preparation
  1. Cook noodles according to package instructions and set aside.
  2. In a skillet, brown the ground pork with 1/4 cup of green onions in peanut oil over medium heat.
  3. Meanwhile, whisk together the chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha in a bowl.
Cooking
  1. Add the cooked noodles, coleslaw mix, and the sauce to the skillet with the pork.
  2. Toss everything together for 2–3 minutes until well coated.
  3. Garnish with the remaining green onions and serve hot.

Notes

Serve in deep bowls for an inviting look. Pair with soy sauce or chili oil for added flavor. This recipe generously serves 4 people.
