  • 2 tablespoons olive oil or vegetable oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder (optional, for added heat)
  • to taste Salt and black pepper
  • 6 large eggs
  • 1/4 cup milk (optional, for making eggs creamier)
  • 1 tablespoon unsalted butter or oil (for cooking the eggs)
  • 1 cup shredded cheddar cheese (or Monterey Jack) or your preferred cheese blend
  • 8 small flour tortillas (or corn tortillas, if you prefer)
For Garnishing
  • to taste Salsa or pico de gallo
  • to taste Sliced avocado or guacamole
  • to taste Chopped fresh cilantro

Method
 

Cooking the Potatoes
  1. Start by heating the olive oil in a large skillet over medium heat. Add the diced potatoes, garlic powder, smoked paprika, chili powder, salt, and pepper.
  2. Cook the potatoes for about 15 minutes, stirring occasionally, until they are crispy and golden brown.
Cooking the Eggs
  1. While the potatoes are cooking, whisk together the eggs and milk in a bowl. Season with salt and pepper.
  2. In another skillet, melt the butter or heat oil over medium heat. Add the egg mixture and cook, stirring gently until the eggs are just set.
Assembling the Tacos
  1. Once the potatoes and eggs are ready, warm the tortillas in a dry skillet or microwave.
  2. Assemble the tacos by filling each tortilla with potatoes, eggs, and cheese. Top with salsa, avocado, cilantro, and any other desired toppings.
